pork tenderloin
This has turned into my "I don't have all day to watch the pit, but I want to slow-cook something" dish.
Take one pork tenderloin, rub it with garlic, black pepper, and whatever other spices sound good at the time, and then wrap strips of bacon around it. I'm still trying to figure out how to stuff it with ham.
Cook for about 2 1/2 hours.
I'm finally getting my heat management down, ribs are next.
No fair making me drool on my keyboard.
